  • 1 yellow onion

  • Optional: 2 eggs

Instructions

  1. Peel and dice sweet potatoes into small cubes. Chop the onion and bell pepper.
  2. Heat olive oil in a large skillet over medium heat. Add sweet potatoes and cook for about 10 minutes until slightly softened.
  3. Stir in diced onion and bell pepper, cooking for an additional 5–7 minutes until tender.
  4. Add minced garlic, cumin, smoked paprika, salt, and pepper; cook for another 2–3 minutes until fragrant.
  5. Optional: Create two wells in the hash and crack eggs into them. Cover the skillet for about 5–6 minutes or until eggs are cooked to your liking.
  6. Garnish with fresh herbs if desired, then serve hot.
