For the Sweet and Sour Sauce:

  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/3 cup brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

For the Stir Fry:

  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 small onion, cut into chunks
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare the Chicken:
    • Dredge the chicken pieces in cornstarch, dip in beaten eggs, and set aside.
    • Heat the oil in a skillet over medium-high heat. Fry the chicken in batches until golden and crispy. Remove and drain on a paper towel-lined plate.
  2. Make the Sauce:
    • In a small saucepan, combine ketchup, rice vinegar, soy sauce, and brown sugar. Bring to a simmer over medium heat.
    • Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens. Set aside.
  3. Cook the Vegetables:
    • Heat 1 tablespoon of oil in a large skillet or wok. Add bell peppers, onion, and pineapple chunks. Stir-fry for 3-4 minutes until slightly tender.
  4. Combine Everything:
    • Add the fried chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the top and toss until everything is evenly coated.
  5. Serve:
    • Serve hot over steamed rice or noodles. Garnish with green onions or sesame seeds if desired.
