- 1/4 cup soy sauce
- 1/3 cup brown sugar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 small onion, cut into chunks
- 1 tablespoon vegetable oil
Instructions
- Prepare the Chicken:
- Dredge the chicken pieces in cornstarch, dip in beaten eggs, and set aside.
- Heat the oil in a skillet over medium-high heat. Fry the chicken in batches until golden and crispy. Remove and drain on a paper towel-lined plate.
- Make the Sauce:
- In a small saucepan, combine ketchup, rice vinegar, soy sauce, and brown sugar. Bring to a simmer over medium heat.
- Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens. Set aside.
- Cook the Vegetables:
- Heat 1 tablespoon of oil in a large skillet or wok. Add bell peppers, onion, and pineapple chunks. Stir-fry for 3-4 minutes until slightly tender.
- Combine Everything:
- Add the fried chicken to the skillet with the vegetables. Pour the sweet and sour sauce over the top and toss until everything is evenly coated.
