  • 2 medium sweet potatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the sweet potatoes and prick them several times with a fork. Place them on the baking sheet.
  3. Bake for 45-50 minutes or until tender when pierced with a fork; allow to cool slightly.
