Ingredients

  • 4 large bell peppers
  • 2 cups cooked rice
  • 1 lb ground meat (beef or turkey) or 1 can black beans
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup grated cheese (cheddar or mozzarella)
  • cumin, paprika, salt, and pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook rice according to package instructions; set aside.
  3. In a skillet over medium heat, sauté onions and garlic until translucent.
  4. Add ground meat or beans; cook until browned (7-10 minutes).
  5. Stir in diced tomatoes and spices; simmer for 5 minutes.
  6. Mix in cooked rice until combined.
  7. Cut tops off bell peppers and remove seeds; stuff with filling.
  8. Place in a baking dish, cover with foil, and bake for 30 minutes.
  9. Remove foil during the last 10 minutes to melt cheese on top.
