- 1 can diced tomatoes
- 1 onion, chopped

Instructions
- Preheat oven to 375°F (190°C).
- Cook rice according to package instructions; set aside.
- In a skillet over medium heat, sauté onions and garlic until translucent.
- Add ground meat or beans; cook until browned (7-10 minutes).
- Stir in diced tomatoes and spices; simmer for 5 minutes.
- Mix in cooked rice until combined.
- Cut tops off bell peppers and remove seeds; stuff with filling.
- Place in a baking dish, cover with foil, and bake for 30 minutes.
- Remove foil during the last 10 minutes to melt cheese on top.
