Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- ½ cup feta cheese, crumbled
- 2 tbsp cream cheese, softened
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix well to form the stuffing.
- Slice a pocket into each chicken breast horizontally (without cutting all the way through). Season both sides of the chicken breasts with salt, pepper, and a drizzle of olive oil.
- Stuff each chicken breast with the spinach and feta mixture, pressing gently to seal the edges.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear each side for 2-3 minutes, until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes.
- Garnish with fresh parsley and serve.
