  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 2 tbsp cream cheese, softened
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix well to form the stuffing.
  • Slice a pocket into each chicken breast horizontally (without cutting all the way through). Season both sides of the chicken breasts with salt, pepper, and a drizzle of olive oil.
  • Stuff each chicken breast with the spinach and feta mixture, pressing gently to seal the edges.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear each side for 2-3 minutes, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Remove from the oven and let the chicken rest for 5 minutes.
  • Garnish with fresh parsley and serve.

Notes

  • For added flavor, you can also add a tablespoon of chopped sun-dried tomatoes or olives to the stuffing mixture.
  • Serve with roasted potatoes, steamed vegetables, or a side salad for a balanced meal.
  • If you prefer a more crispy chicken skin, you can broil the stuffed chicken for an additional 2-3 minutes at the end of baking.
