  • 34 Boneless, Skinless Chicken Breasts
  • 2 Fresh Bell Peppers (Red and Green)
  • 1 cup Heavy Cream
  • 2 tablespoons Cajun Seasoning
  • 8 oz Fettuccine or Linguine Pasta
  • ½ cup Freshly Grated Parmesan Cheese
  • 2 tablespoons Olive Oil
  • 3 Garlic Cloves

Instructions

  1. Prepare your ingredients by chopping chicken into bite-sized pieces, dicing bell peppers, and mincing garlic.
  2. In a skillet over medium heat, add olive oil and sauté the chicken until golden brown (5-7 minutes). Add garlic in the last minute.
  3. Toss in diced bell peppers and sauté for 3-4 minutes until tender-crisp.
  4. Stir in heavy cream and sprinkle with Cajun seasoning; let simmer until thickened (about 5 minutes).
  5. Cook pasta according to package instructions until al dente; drain and reserve some pasta water.
  6. Combine drained pasta with the sauce in the skillet, tossing well. Use reserved pasta water to achieve desired creaminess. Top with grated Parmesan before serving.
