- 3–4 Boneless, Skinless Chicken Breasts
- 2 Fresh Bell Peppers (Red and Green)
- 1 cup Heavy Cream
- 2 tablespoons Cajun Seasoning
- 8 oz Fettuccine or Linguine Pasta
- ½ cup Freshly Grated Parmesan Cheese
- 2 tablespoons Olive Oil
- 3 Garlic Cloves
Instructions
- Prepare your ingredients by chopping chicken into bite-sized pieces, dicing bell peppers, and mincing garlic.
- In a skillet over medium heat, add olive oil and sauté the chicken until golden brown (5-7 minutes). Add garlic in the last minute.
- Toss in diced bell peppers and sauté for 3-4 minutes until tender-crisp.
- Stir in heavy cream and sprinkle with Cajun seasoning; let simmer until thickened (about 5 minutes).
- Cook pasta according to package instructions until al dente; drain and reserve some pasta water.
- Combine drained pasta with the sauce in the skillet, tossing well. Use reserved pasta water to achieve desired creaminess. Top with grated Parmesan before serving.
