  • 4 cod fillets (6 oz each), skin removed
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the cod fillets and sear for 3-4 minutes on each side until golden and cooked through. The fish should flake easily with a fork. Remove the cod from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1-2 minutes, stirring constantly, until the garlic is fragrant and golden (be careful not to burn it).
  4. Add the lemon juice, fresh parsley, and red pepper flakes (if using). Stir to combine.
  5. Return the cod fillets to the skillet and spoon the garlic butter sauce over the fish.
  6. Serve immediately, garnished with additional parsley and lemon wedges if desired.

Notes

  • If you don’t have cod, this recipe works well with other firm white fish like halibut or haddock.
  • For extra flavor, you can add a splash of white wine to the garlic butter sauce.
  • You can make this dish in advance by preparing the garlic butter sauce and storing it separately. Reheat before serving.
