Description

Ingredients

  • 1 cup canned chickpeas, rinsed
  • 2 whole wheat wraps
  • 1 cup fresh spinach
  • ½ cucumber, sliced
  • 1 medium tomato, diced
  • ¼ red onion, thinly sliced
  • ½ cup hummus
  • Juice of ½ lemon
  • ¼ cup crumbled feta cheese (optional)

Instructions

  1. Wash spinach and slice cucumber, tomato, and red onion evenly.
  2. In a bowl, mix hummus with lemon juice to create a spread.
  3. Layer spinach, cucumber, tomato, onion, and chickpeas on each wrap.
  4. Sprinkle with feta cheese if desired.
  5. Tuck in the sides of the wrap and roll tightly from one end. Slice diagonally to serve.
