- 4 large russet potatoes
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 1/4 cup ranch dressing (optional)
- 1/4 teaspoon garlic powder (optional)
Instructions
- Prepare the Potatoes:
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes clean and poke a few holes in each with a fork.
- Rub the potatoes with olive oil, sprinkle with salt and pepper, and place them directly on the oven rack.
- Bake for 45-50 minutes, until the potatoes are tender.
- Scoop out the Flesh:
- Once the potatoes are cool enough to handle, slice them in half lengthwise.
- Using a spoon, scoop out most of the potato flesh, leaving about 1/4-inch of potato around the skin. Set the potato flesh aside for another use, like mashed potatoes.
- Crisp the Potato Skins:
- Place the potato skins on a baking sheet, skin side up.
- Brush both sides with a little more olive oil and season with salt and pepper.
- Bake for an additional 10-15 minutes, or until the skins are golden and crispy.
- Stuff and Bake Again:
- Remove the potato skins from the oven and sprinkle the inside of each skin with shredded cheddar cheese and crumbled bacon.
- Return the stuffed skins to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove the potato skins from the oven and top with a dollop of sour cream, chopped green onions, and a drizzle of ranch dressing if desired.
- Serve immediately.

- You can make these loaded potato skins with a variety of toppings like sautéed mushrooms, jalapeños, or even guacamole for extra flavor.
