Ingredients

  • 1 lb boneless chicken thighs
  • 1 large yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh ginger
  • 1 can (14 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • Fresh cilantro leaves
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the onion, garlic, ginger, and cilantro.
  2. In a large skillet over medium heat, sauté chopped onions in oil until translucent; add minced garlic and grated ginger for about 1 minute.
  3. Add bite-sized chicken thighs to the skillet and cook until browned (5-7 minutes).
  4. Stir in spices (cumin, coriander, turmeric, salt, and pepper) and coat the chicken well for 2 minutes.
  5. Pour in diced tomatoes and coconut milk; simmer on low heat for 20-25 minutes until thickened.
  6. Mix in fresh cilantro just before serving. Serve with rice or naan.
