- 1 lb boneless chicken thighs
- 1 large yellow onion
- 4 garlic cloves
- 1 tbsp fresh ginger
- 1 can (14 oz) diced tomatoes
- 1 can (13.5 oz) coconut milk
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- Fresh cilantro leaves
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping the onion, garlic, ginger, and cilantro.
- In a large skillet over medium heat, sauté chopped onions in oil until translucent; add minced garlic and grated ginger for about 1 minute.
- Add bite-sized chicken thighs to the skillet and cook until browned (5-7 minutes).
- Stir in spices (cumin, coriander, turmeric, salt, and pepper) and coat the chicken well for 2 minutes.
- Pour in diced tomatoes and coconut milk; simmer on low heat for 20-25 minutes until thickened.
- Mix in fresh cilantro just before serving. Serve with rice or naan.
