Instructions
- Preheat the Oven:
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
- Prepare the Chicken Thighs:
- Pat the chicken thighs dry with paper towels. Rub them with olive oil and season generously with salt and black pepper.
- Make the Honey Mustard Glaze:
- In a small bowl, whisk together Dijon mustard, honey, whole-grain mustard, minced garlic, apple cider vinegar, paprika, and cayenne pepper (if using) until smooth and well combined.
- Glaze the Chicken:
- Place the chicken thighs skin-side up in the prepared baking dish. Brush the glaze generously over the thighs, ensuring they’re well coated.
- Bake the Chicken:
- Bake the chicken in the preheated oven for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and caramelized. For extra crispiness, broil the chicken on high for 2–3 minutes at the end of cooking.

- Let the chicken rest for 5 minutes before serving. Drizzle any remaining glaze from the baking dish over the top.
