Description

Tender, juicy chicken thighs coated in a sweet and tangy honey mustard glaze make this dish an instant hit. Perfect for weeknight dinners or entertaining, this easy recipe pairs well with roasted vegetables or rice for a balanced meal.

Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/3 cup Dijon mustard
  • 3 tbsp honey
  • 1 tbsp whole-grain mustard
  • 2 garlic cloves, minced
  • 1 tbsp apple cider vinegar
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional, for heat)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  • Prepare the Chicken Thighs:
    • Pat the chicken thighs dry with paper towels. Rub them with olive oil and season generously with salt and black pepper.
  • Make the Honey Mustard Glaze:
    • In a small bowl, whisk together Dijon mustard, honey, whole-grain mustard, minced garlic, apple cider vinegar, paprika, and cayenne pepper (if using) until smooth and well combined.
  • Glaze the Chicken:
    • Place the chicken thighs skin-side up in the prepared baking dish. Brush the glaze generously over the thighs, ensuring they’re well coated.
  • Bake the Chicken:
    • Bake the chicken in the preheated oven for 35–40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and caramelized. For extra crispiness, broil the chicken on high for 2–3 minutes at the end of cooking.
  • Serve:
    • Let the chicken rest for 5 minutes before serving. Drizzle any remaining glaze from the baking dish over the top.

Notes

  • For a lighter option, use skinless chicken thighs or boneless chicken breasts. Adjust cooking time accordingly.
  • Serve with roasted potatoes, green beans, or a simple salad for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
