Ingredients

  • 1 lb ground beef (or turkey)
  • 1 yellow onion
  • 3 cloves garlic
  • 2 bell peppers
  • 28 oz canned diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups chicken or vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions; sauté until translucent.
  2. Stir in minced garlic and diced bell peppers; cook until fragrant (about 3 minutes).
  3. Increase heat slightly, add ground beef (or turkey), and brown completely. Drain excess fat if necessary.
  4. Pour in canned tomatoes, chili powder, cumin, salt, and pepper; mix well.
  5. Stir in drained kidney beans and broth; bring to a gentle simmer for 20–30 minutes.
  6. Serve hot, topped with sour cream if desired.
