- 1 lb ground beef (or turkey)
- 1 yellow onion
- 3 cloves garlic
- 2 bell peppers
- 28 oz canned diced tomatoes
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 cups chicken or vegetable broth
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions; sauté until translucent.
- Stir in minced garlic and diced bell peppers; cook until fragrant (about 3 minutes).
- Increase heat slightly, add ground beef (or turkey), and brown completely. Drain excess fat if necessary.
- Pour in canned tomatoes, chili powder, cumin, salt, and pepper; mix well.
- Stir in drained kidney beans and broth; bring to a gentle simmer for 20–30 minutes.
- Serve hot, topped with sour cream if desired.
