Ingredients
Scale
For the Ribs:
- 3 pounds (1.5 kg) halal beef or lamb ribs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
For the BBQ Sauce:
- 1 cup halal-friendly ketchup
- 1/4 cup honey
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon Worcestershire sauce (halal-certified)
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder (optional, for heat)
- 1 clove garlic, minced
Instructions
- Prepare the Ribs:
- Preheat your grill to medium heat or set up for indirect cooking.
- Remove the membrane from the back of the ribs if present. Rub the ribs with olive oil, then season with salt, black pepper, smoked paprika, garlic powder, and onion powder.
- Make the BBQ Sauce:
- In a small saucepan over medium heat, combine ketchup, honey, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, chili powder, and minced garlic. Simmer for 5-7 minutes, stirring occasionally, until slightly thickened. Set aside.
- Cook the Ribs:
- Place the ribs on the grill over indirect heat, bone-side down. Cover and cook for 2-3 hours, maintaining a temperature of around 275°F (135°C). Check occasionally to ensure even cooking.
- Add the BBQ Sauce:
- During the last 30 minutes of cooking, brush the ribs generously with the prepared BBQ sauce.
- Finish and Serve:
- Move the ribs to direct heat for the last 5 minutes to caramelize the sauce slightly. Remove from the grill, let rest for 10 minutes, and serve with extra BBQ sauce on the side.
Notes
- You can bake the ribs in the oven at 275°F (135°C) if grilling is not an option.
- For extra flavor, marinate the ribs in the seasoning overnight.
- Pair with coleslaw, cornbread, or grilled vegetables for a complete meal.
