For the Marinade:

  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey or brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

For the Skewers:

  • 1 lb beef sirloin or tenderloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced into thick rounds
  • 1 cup cherry tomatoes
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade:
    • In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, honey, garlic, oregano, paprika, salt, and pepper.
  2. Marinate the Beef:
    • Place the beef cubes in a resealable bag or shallow dish. Pour the marinade over the beef, ensuring all pieces are coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Prepare the Skewers:
    • If using wooden skewers, soak them in water for 30 minutes to prevent burning.
    • Thread marinated beef, bell peppers, onion, zucchini, and cherry tomatoes alternately onto the skewers.
  4. Grill the Skewers:
    • Preheat the grill to medium-high heat. Lightly oil the grates to prevent sticking.
    • Place the skewers on the grill and cook for 8-10 minutes, turning occasionally, until the beef is cooked to your desired doneness and the vegetables are slightly charred.
  5. Serve:
    • Transfer the skewers to a serving platter, sprinkle with fresh herbs like parsley or cilantro, and serve hot.
