Instructions
Creamy Coconut Chicken Curry:
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger, sautéing until fragrant.
- Add the cubed chicken to the pot and cook until browned on all sides.
- Stir in the red curry paste, turmeric, and cumin, cooking for 2-3 minutes.
- Pour in the coconut milk, season with salt and pepper, and simmer for 15-20 minutes until the sauce thickens and the chicken is cooked through.
