  • 2 tbsp olive oil

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta: Boil pasta in salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  • Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add onions and garlic, cooking until soft. Add mushrooms and sauté until browned.
  • Add Spinach: Stir in fresh spinach and cook until wilted.
  • Make the Sauce: Pour in heavy cream and add grated Parmesan cheese. Stir well until sauce thickens. Season with salt, pepper, and red pepper flakes.
  • Combine Pasta and Sauce: Add cooked pasta to the skillet. Toss gently, adding reserved pasta water if the sauce is too thick.
