Ingredients
Scale
For the Chicken Parmesan:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 1/2 cups breadcrumbs (Italian-style preferred)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil (for frying)
- 1 cup marinara sauce (store-bought or homemade)
- 1 1/2 cups shredded mozzarella cheese
- 2 tablespoons chopped fresh basil (for garnish)
For the Spaghetti:
- 12 oz spaghetti
- Water and salt (for boiling)
- 1 tablespoon olive oil
- 1/2 cup marinara sauce (to toss with the pasta)
Instructions
- Prepare the Chicken:
- Pound the chicken breasts to an even thickness.
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, garlic powder, oregano, salt, and pepper.
- Bread the Chicken:
- Dredge each chicken breast in flour, dip into the eggs, and coat with the breadcrumb mixture. Press the breadcrumbs gently onto the chicken to ensure an even coating.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium-high heat. Fry the chicken for 3-4 minutes per side until golden brown and cooked through. Transfer to a paper towel-lined plate.
- Bake the Chicken:
- Preheat the oven to 375°F (190°C). Place the cooked chicken on a baking sheet, top each piece with marinara sauce, and sprinkle with mozzarella cheese.
- Bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Cook the Spaghetti:
- Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Drain and toss with olive oil and marinara sauce.
- Assemble and Serve:
- Place a portion of spaghetti on each plate and top with a piece of Chicken Parmesan. Garnish with fresh basil and extra Parmesan cheese, if desired.
Notes
- For a lighter option, bake the breaded chicken at 400°F (200°C) for 20-25 minutes instead of frying.
- Use gluten-free breadcrumbs and flour to make the dish gluten-free.
- Store leftovers in the refrigerator for up to 3 days and reheat in the oven for best results.
