For the Fajitas:

  • 1 pound (450g) boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste

To Serve:

  • 8 small flour or corn tortillas, warmed
  • Fresh cilantro leaves, chopped
  • Lime wedges
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa

Instructions

  1. Prepare the Chicken:
    • In a small bowl, mix chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Sprinkle the seasoning mixture evenly over the chicken strips.
  2. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-6 minutes, or until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil. Add the bell peppers and onion, cooking for 4-5 minutes until softened but still crisp.
  4. Combine and Heat:
    • Return the cooked chicken to the skillet with the vegetables. Stir to combine and cook for 1-2 more minutes until heated through.
  5. Assemble the Fajitas:
    • Serve the chicken and bell pepper mixture on warm tortillas. Garnish with cilantro and a squeeze of lime juice. Add your favorite toppings and enjoy!
