- 3–4 boneless skinless chicken breasts
- 2 ripe avocados
- 4 large flour tortillas
- Juice of 2 limes
- 1/2 cup chopped fresh cilantro
- 1 small red onion, thinly sliced
- 2 tablespoons taco seasoning
- Optional: sour cream or Greek yogurt
Instructions
- Season chicken breasts with taco seasoning. Cook in a skillet over medium heat for 6-7 minutes per side until golden brown and cooked through.
- Let the chicken rest for 5 minutes before shredding it with two forks.
- While the chicken cooks, slice avocados and red onion, and chop cilantro.
- Lay tortillas flat and layer shredded chicken, avocado slices, red onions, and cilantro in the center.
- Drizzle lime juice over the fillings and add sour cream if desired.
- Fold in the sides of each tortilla and roll tightly from top to bottom.
