For the Stir-Fry:

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 bell pepper, thinly sliced
  • 1 carrot, thinly sliced
  • 1 small zucchini, sliced
  • 1 cup broccoli florets
  • 1/2 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated

For the Sauce:

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)

For Serving:

  • Cooked rice or noodles
  • Sesame seeds (optional)
  • Fresh cilantro or green onions (optional)

Instructions

  • Prepare the Sauce: In a small bowl, whisk together soy sauce, oyster sauce (if using), honey or maple syrup, rice vinegar, sesame oil, and red pepper flakes (if using). Set aside.
  • Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 5-6 minutes, or until browned and cooked through. Remove the chicken from the skillet and set aside.
  • Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the onion, garlic, and ginger, and sauté for 1-2 minutes until fragrant. Add the bell pepper, carrot, zucchini, and broccoli. Stir-fry for 5-6 minutes, or until the vegetables are tender-crisp.
  • Combine the Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and veggies, stirring to coat everything evenly. Cook for an additional 2-3 minutes until everything is heated through and the sauce has thickened slightly.
  • Serve: Serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds and fresh cilantro or green onions, if desired. Serve immediately.
