Ingredients

  • 4 medium carrots, peeled and chopped
  • 2 tablespoons fresh ginger, grated
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent.
  2. Add chopped carrots and grated ginger; stir to combine well.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for about 20 minutes until carrots are tender.
