Description

Buffalo Chicken Stuffed Peppers are a zesty, crowd-pleasing dish combining tender chicken, spicy buffalo sauce, and creamy ranch, all encased in colorful bell peppers. Perfect for any occasion!


Ingredients

  • 4 large bell peppers (any color)
  • 34 boneless skinless chicken breasts
  • 1 cup buffalo sauce
  • ½ cup ranch dressing
  • 1 cup shredded cheddar cheese
  • ¼ cup green onions, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice off the tops of the bell peppers and remove seeds.
  3. In a skillet, heat olive oil over medium heat and cook diced chicken until golden brown (7-10 minutes).
  4. Stir in buffalo sauce and ranch dressing with the cooked chicken until well combined.
  5. Generously stuff each pepper with the chicken mixture and top with shredded cheese.
  6. Place stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
