- 4 large bell peppers (any color)
- 3–4 boneless skinless chicken breasts
- 1 cup buffalo sauce
- ½ cup ranch dressing
- 1 cup shredded cheddar cheese
- ¼ cup green onions, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Slice off the tops of the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat and cook diced chicken until golden brown (7-10 minutes).
- Stir in buffalo sauce and ranch dressing with the cooked chicken until well combined.
- Generously stuff each pepper with the chicken mixture and top with shredded cheese.
- Place stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
