Ingredients

  • 1/2 cup diced bell peppers

  • Slices of avocado (optional)

Instructions

  1. Heat a skillet over medium heat. Cook the bacon or sausage until crispy; remove from the skillet but reserve drippings.
  2. In the same skillet, sauté diced onions and bell peppers until tender, about 5 minutes.
  3. Whisk together eggs, salt, and pepper in a bowl until frothy. Pour into the skillet with veggies and scramble gently until just set.
  4. Mix in the cooked protein and cheese until melted and combined.
  5. Lay a tortilla flat, spoon filling into the center, fold sides in, and roll tightly from bottom to top.
