Instructions
- Heat a skillet over medium heat. Cook the bacon or sausage until crispy; remove from the skillet but reserve drippings.
- In the same skillet, sauté diced onions and bell peppers until tender, about 5 minutes.
- Whisk together eggs, salt, and pepper in a bowl until frothy. Pour into the skillet with veggies and scramble gently until just set.
