  • 1 lb flank steak
  • 2 bell peppers (red and green)
  • 1 large onion
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Spices: chili powder, cumin, garlic powder, salt, pepper

Instructions

  1. Slice flank steak against the grain into thin strips. In a bowl, mix lime juice, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add beef strips and marinate for 15-20 minutes.
  2. While marinating, slice bell peppers and onion into thin strips.
  3. Heat olive oil in a skillet over medium-high heat. Cook marinated beef until browned on all sides (5-7 minutes). Remove from pan.
  4. Sauté sliced vegetables until softened but still crisp (4-5 minutes).
  5. Return beef to the skillet with vegetables; stir to combine and heat through for another minute.
