  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups enchilada sauce (store-bought or homemade)
  • 8 large flour or corn tortillas
  • 2 cups shredded Mexican blend cheese, divided
  • 1/2 cup chopped green onions (optional, for garnish)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)

Instructions

  1. Prepare the Beef Filling:
    • Preheat the oven to 375°F (190°C).
    • In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon.
    • Add onions and garlic, cooking until softened (about 3 minutes). Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute to toast the spices. Remove from heat.
  2. Assemble the Enchiladas:
    • Spread 1/2 cup of enchilada sauce on the bottom of a 9×13-inch baking dish.
    • Spoon a generous amount of the beef mixture onto the center of each tortilla. Sprinkle with a small handful of cheese.
    • Roll up the tortillas tightly and place them seam-side down in the prepared dish.
  3. Add the Sauce and Cheese:
    • Pour the remaining enchilada sauce evenly over the rolled tortillas.
    • Sprinkle the remaining shredded cheese on top.
  4. Bake:
    • Cover the dish with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Garnish with chopped green onions and fresh cilantro if desired. Serve hot with rice, beans, or a side salad.
