- 2 cups enchilada sauce (store-bought or homemade)
- 8 large flour or corn tortillas
- 2 cups shredded Mexican blend cheese, divided
- 1/2 cup chopped green onions (optional, for garnish)
- 1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
- Prepare the Beef Filling:
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon.
- Add onions and garlic, cooking until softened (about 3 minutes). Stir in chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1 minute to toast the spices. Remove from heat.
- Assemble the Enchiladas:
- Spread 1/2 cup of enchilada sauce on the bottom of a 9×13-inch baking dish.
- Spoon a generous amount of the beef mixture onto the center of each tortilla. Sprinkle with a small handful of cheese.
- Roll up the tortillas tightly and place them seam-side down in the prepared dish.
- Add the Sauce and Cheese:
- Pour the remaining enchilada sauce evenly over the rolled tortillas.
- Sprinkle the remaining shredded cheese on top.
- Bake:
- Cover the dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
