Ingredients
- 12 large white or cremini mushrooms, stems removed
- 1 tablespoon olive oil
- 1/2 lb ground beef
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1 teaspoon salt (or to taste)
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Prepare the Mushrooms:
- Preheat the oven to 375°F (190°C).
- Clean the mushroom caps with a damp paper towel and remove the stems. Set the caps aside.
- Chop the stems finely and reserve for the filling.
- Cook the Beef Filling:
- Heat the olive oil in a skillet over medium heat.
- Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
- Add the chopped onion and garlic to the skillet and cook for another 2-3 minutes, until softened and fragrant.
- Stir in the chopped mushroom stems, oregano, black pepper, and salt. Cook for another 3-4 minutes, allowing the mushrooms to soften and the flavors to combine.
- Make the Stuffing Mixture:
- Remove the skillet from heat and stir in the cream cheese, mozzarella, and Parmesan cheese until the mixture is creamy and well-combined.
- Stuff the Mushrooms:
- Spoon the beef and cheese mixture into the mushroom caps, packing the filling gently into each cap. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
- Bake the Mushrooms:
- Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
- Garnish and Serve:
- Once baked, remove the stuffed mushrooms from the oven and garnish with fresh parsley. Serve immediately and enjoy!
- Enjoy!
- These Beef and Cheese Stuffed Mushrooms are the perfect appetizer for any occasion!
Notes
- You can make these stuffed mushrooms ahead of time and refrigerate them before baking. Just add a few extra minutes to the baking time if cooking from cold.
- For a spicier version, add red pepper flakes or a pinch of cayenne pepper to the beef mixture.
- If you don’t have fresh parsley, dried herbs like thyme or basil can be used for garnish.
