Ingredients
Scale
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 medium apples, peeled and dice
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with non-stick spray.
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
- Prepare the Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract.
- Combine and Fold: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Fold in the diced apples gently until evenly distributed.
- Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For an extra crunch, sprinkle a cinnamon-sugar mixture or chopped nuts on top of the muffins before baking.
- Store the muffins in an airtight container at room temperature for up to 3 days or freeze them for up to 3 months.
- You can use whole wheat flour for a healthier version, but the texture may be slightly denser.
