  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 medium apples, peeled and dice

Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with non-stick spray.
  • Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
  • Prepare the Wet Ingredients: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined. Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract.
  • Combine and Fold: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Fold in the diced apples gently until evenly distributed.
  • Fill the Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
