Ingredients

  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 6 egg yolks
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons cornstarch
  • 1 cup heavy cream
  • 8 ounces dark chocolate (60% cocoa or higher)

Instructions

  1. In a medium saucepan, heat the whole milk and granulated sugar over medium heat until warm.
  2. In a separate bowl, whisk together egg yolks and cornstarch until smooth. Gradually add the warm milk mixture while whisking continuously.
  3. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened (about 5 minutes).
  4. Remove from heat and stir in vanilla extract; pour custard into serving dishes to cool.
  5. For ganache, heat heavy cream until simmering, then pour over chopped dark chocolate and stir until smooth.
  6. Once the custard is slightly warm, generously top with chocolate ganache. Chill for at least two hours before serving.
