Instructions

  1. Prepare the Ramekins:
    • Preheat the oven to 425°F (220°C).
    • Generously grease four 6-ounce ramekins with butter and lightly dust with flour. Tap out excess.
  2. Make the Chocolate Batter:
    • Melt the dark chocolate and butter together in a heatproof bowl over a pot of simmering water, or in the microwave in 20-second increments, stirring until smooth.
    • In a separate bowl, whisk the eggs, egg yolks, sugar, and salt until pale and fluffy.
    • Gently fold the melted chocolate mixture into the egg mixture. Sift in the flour and fold until just combined.
  3. Fill and Bake:
    • Divide the batter evenly among the prepared ramekins.
    • Bake for 12-14 minutes, or until the edges are set but the center is still soft.
