  • 1/2 cup (60g) all-purpose flour
  • 1/4 cup (25g) breadcrumbs
  • 1 large egg
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp ground black pepper
  • Salt to taste
  • Olive oil (for frying)

For the Rose Water Yogurt Sauce:

  • 1/2 cup (120g) Greek yogurt
  • 1 tsp rose water
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • Salt to taste

Instructions

  • repare the Zucchini:
    • Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much moisture as possible.
  • Make the Fritter Mixture:
    • In a bowl, mix the zucchini, flour, breadcrumbs, egg, parsley, dill, garlic powder, black pepper, and salt. Stir until a thick mixture forms.
  • Fry the Fritters:
    • Heat olive oil in a large skillet over medium heat.
    • Spoon 1–2 tablespoons of the zucchini mixture into the pan, forming small patties.
    • Fry each fritter for 3–4 minutes per side until golden and crispy. Drain on paper towels to remove excess oil.
  • Prepare the Rose Water Yogurt Sauce:
    • In a small bowl, combine Greek yogurt, rose water, honey, lemon juice, and salt. Stir well to create a smooth sauce.
  • Serve:
    • Serve the fritters warm with a dollop of rose water yogurt sauce on the side. Garnish with fresh parsley or edible flowers for added elegance.
