These golden wedges are perfectly seasoned with smoky paprika and a mix of fresh herbs, offering a delightful crunch on the outside and a fluffy interior. Whether served alongside your favorite main dish or enjoyed as a standalone snack with your favorite dipping sauce, these wedges are sure to be a hit with everyone.

Ingredients

Scale

  • 4 large russet potatoes, scrubbed and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Prepare the Potato Wedges: Place the potato wedges in a large bowl. Add olive oil, smoked paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and pepper. Toss well to coat the potatoes evenly with the seasoning.
  • Arrange on Baking Sheet: Spread the seasoned potato wedges in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  • Bake the Wedges: Bake in the preheated oven for 35-40 minutes, flipping the wedges halfway through, until they are golden brown and crispy on the outside.
  • Serve: Remove from the oven and sprinkle with fresh parsley. Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, soak the potato wedges in cold water for 30 minutes before seasoning and baking. This helps remove excess starch.
  • You can customize the seasoning with your favorite spices, such as cayenne pepper for a spicy kick or rosemary for an earthy flavor.
  • These wedges are best enjoyed fresh but can be reheated in the oven at 375°F (190°C) for 10-15 minutes to regain their crispiness.
