    • 2 tablespoons olive oil
    • 1 medium onion, finely chopped
    • 3 garlic cloves, minced
    • 4 large ripe tomatoes, chopped (or one 28-ounce can of whole tomatoes)
    • 2 cups vegetable broth
    • 1/2 cup heavy cream
    • 1/4 cup fresh basil leaves, chopped (plus extra for garnish)
    • 1 teaspoon sugar (optional, to balance acidity)
    • Salt and pepper to taste
  • For the Croutons:
    • 2 cups bread cubes (from a crusty loaf)
    • 2 tablespoons olive oil
    • 1 teaspoon garlic powder
    • 1/2 teaspoon dried oregano
    • Salt to taste

Instructions

  1. Prepare the Soup:
    • Heat olive oil in a large pot over medium heat. Add the onion and sauté until softened, about 5 minutes.
    • Stir in garlic and cook until fragrant, about 1 minute.
    • Add chopped tomatoes (or canned tomatoes with their juice) and cook for 10 minutes, stirring occasionally.
    • Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes.
    • Use an immersion blender (or transfer to a blender) to puree the soup until smooth.
    • Stir in heavy cream and chopped basil. Season with salt, pepper, and sugar if needed.
  2. Make the Croutons:
    • Preheat oven to 375°F (190°C).
    • Toss bread cubes with olive oil, garlic powder, oregano, and salt. Spread on a baking sheet.
    • Bake for 10-12 minutes or until golden and crisp, turning halfway through.
  3. Serve:
    • Ladle the soup into bowls, top with croutons, and garnish with fresh basil. Enjoy warm!
