Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.
  2. Prepare the Mushrooms:
    • Heat olive oil and butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 5-7 minutes, stirring occasionally, until they are golden and tender.
    • Stir in the garlic, thyme, and oregano. Cook for another 1-2 minutes until fragrant.
  3. Create the Sauce:
    • If using, deglaze the skillet with white wine and let it simmer for 2-3 minutes until slightly reduced.
    • Lower the heat and add the heavy cream, stirring to combine. Let the sauce simmer for 3-4 minutes until it thickens slightly.
    • Stir in the Parmesan cheese and season with salt and black pepper to taste.
  4. Combine Pasta and Sauce:
    • Add the cooked pasta to the skillet and toss it gently in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Serve:
    • Divide the pasta into serving bowls and garnish with fresh parsley. Serve immediately with crusty bread and a glass of wine.
