Instructions
- Prepare the Bell Peppers:
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- Drizzle the peppers with olive oil and season with a pinch of salt and pepper. Bake for 10 minutes to soften slightly.
- Prepare the Filling:
- In a large bowl, combine the cooked quinoa, chopped tomatoes, red onion, black beans, corn, cumin, smoked paprika, and lime juice. Mix until well combined.
- Stuff the Peppers:
- Carefully spoon the quinoa mixture into each bell pepper, pressing down gently to pack the filling. Top with shredded cheese.
- Bake the Stuffed Peppers:
- Return the stuffed peppers to the oven and bake for another 15-20 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve:
