  • 1 tbsp honey or maple syrup (for sweetness)
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 12 tbsp warm water (to thin the sauce)
  • Crushed peanuts and cilantro for garnish (optional)

Instructions

  1. Prepare the Chicken:
    • In a bowl, combine the olive oil, soy sauce, garlic powder, onion powder, salt, and pepper.
    • Add the chicken cubes to the marinade and toss to coat evenly. Let it marinate for at least 15 minutes (or up to 1 hour for extra flavor).
  2. Prepare the Peanut Sauce:
    • In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, lime juice, honey (or maple syrup), garlic powder, and ginger powder until smooth.
    • Gradually add warm water, 1 tablespoon at a time, to reach your desired sauce consistency. Set aside.

    • Thread the marinated chicken cubes onto skewers, making sure not to overcrowd them.
  4. Grill the Chicken:
    • Preheat your grill or grill pan over medium-high heat.
    • Grill the chicken skewers for 5-7 minutes per side, or until the chicken is cooked through and has a nice grill mark.
