A classic Italian-American favorite, it’s perfect for a weeknight dinner or a special occasion. The combination of the deep, sweet wine sauce and sautéed mushrooms creates a deliciously balanced dish.
Ingredients
Scale
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour (for dredging)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
For the Marsala Sauce:
- 1 cup Marsala wine (dry or sweet, according to preference)
- 1/2 cup chicken broth
- 1 cup cremini or button mushrooms, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 tablespoon fresh thyme (optional, for added flavor)
Instructions
- Prepare the Chicken:
- Season the chicken breasts with salt and pepper. Lightly dredge each chicken breast in flour, shaking off excess.
- Cook the Chicken:
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Add the chicken breasts and cook for 4-5 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set aside.
- Make the Marsala Sauce:
- In the same skillet, add the sliced mushrooms and cook for 3-4 minutes until they begin to soften and brown.
- Add minced garlic and cook for an additional minute.
- Pour in the Marsala wine and chicken broth, stirring to deglaze the pan (scraping up any browned bits). Let the sauce simmer for 5-7 minutes, reducing slightly.
- Finish the Dish:
- Return the cooked chicken breasts to the skillet and spoon the sauce and mushrooms over the top. Simmer for an additional 3-4 minutes to allow the chicken to absorb the flavors.
- Stir in the remaining tablespoon of butter to finish the sauce with a glossy texture.
- Serve:
- Garnish the Chicken Marsala with fresh parsley and optional thyme. Serve hot with mashed potatoes, pasta, or steamed vegetables for a complete meal.
Notes
- For a more intense flavor, use sweet Marsala wine.
- If you prefer a thicker sauce, mix a teaspoon of cornstarch with water and add it to the sauce while simmering.
- This recipe can be doubled for a larger crowd or family dinner.
