For the Chicken Marinade:

  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

For the Fajitas:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tablespoons olive oil (for cooking)
  • 8 small flour tortillas (or corn tortillas, if preferred)
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa, fresh cilantro

Instructions

  1. Marinate the Chicken:
    • In a bowl, combine olive oil, lime juice, chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper.
    • Add the sliced chicken to the marinade and toss to coat evenly. Cover and let it marinate in the refrigerator for at least 15-30 minutes, or up to 2 hours for deeper flavor.
  2. Cook the Chicken:
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the marinated chicken strips and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set it aside.
  3. Cook the Vegetables:
    • In the same skillet, add the remaining tablespoon of olive oil.
    • Add the sliced bell peppers and onions, and cook for 5-6 minutes, stirring occasionally, until they are soft and slightly charred.
  4. Assemble the Fajitas:
    • Return the cooked chicken to the skillet with the vegetables and toss to combine.
    • Heat the tortillas in a separate skillet or microwave until warm.
  5. Serve:
    • Serve the chicken and vegetable mixture on warm tortillas. Top with optional toppings like sour cream, guacamole, shredded cheese, salsa, and fresh cilantro. Enjoy!
