Instructions
- Marinate the Chicken:
- In a bowl, combine olive oil, lime juice, chili powder, paprika, cumin, garlic powder, onion powder, salt, and black pepper.
- Add the sliced chicken to the marinade and toss to coat evenly. Cover and let it marinate in the refrigerator for at least 15-30 minutes, or up to 2 hours for deeper flavor.
- Cook the Chicken:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the marinated chicken strips and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set it aside.
- Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the sliced bell peppers and onions, and cook for 5-6 minutes, stirring occasionally, until they are soft and slightly charred.
- Assemble the Fajitas:
- Return the cooked chicken to the skillet with the vegetables and toss to combine.
- Heat the tortillas in a separate skillet or microwave until warm.
- Serve:
- Serve the chicken and vegetable mixture on warm tortillas. Top with optional toppings like sour cream, guacamole, shredded cheese, salsa, and fresh cilantro. Enjoy!
