Description

These Chicken and Spinach Lasagna Roll-Ups are a delicious twist on classic lasagna, offering perfect individual portions packed with creamy ricotta, tender spinach, shredded chicken, and rich marinara sauce.   • 8 lasagna noodles, cooked and drained
  • 2 cups cooked shredded chicken
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  • Prepare Filling: In a bowl, mix shredded chicken, ricotta cheese, spinach, mozzarella, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
  • Assemble Roll-Ups: Lay cooked lasagna noodles flat. Spread 2-3 tablespoons of the chicken and spinach mixture evenly over each noodle, then roll them up tightly.
  • Add Sauce: Pour 1 cup of marinara sauce into the bottom of the baking dish. Place roll-ups seam-side down in the dish. Pour the remaining sauce over the roll-ups and sprinkle with extra mozzarella cheese.
  • Bake: Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Serve: Garnish with fresh basil and serve warm.

Notes

  • Substitute shredded turkey or ground chicken if preferred.
  • For added creaminess, mix some Alfredo sauce into the ricotta filling.
  • Store leftovers in an airtight container for up to 3 days in the refrigerator.
