- For the Alfredo Sauce:
- 2 tablespoons unsalted butter
- 3 garlic cloves, minced
- 1 1/2 cups heavy cream
- 1 cup grated parmesan cheese
- 1/4 teaspoon nutmeg (optional)
- Salt and black pepper to taste
- For the Pasta:
- 12 ounces fettuccine or pasta of your choice
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Cook the Chicken:
- Heat olive oil in a large skillet over medium heat. Season the chicken with Italian seasoning, garlic powder, salt, and pepper.
- Add the chicken to the skillet and cook for 5-6 minutes, or until fully cooked and golden. Remove from the skillet and set aside.
- Prepare the Alfredo Sauce:
- In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the heavy cream, stirring constantly. Let it simmer for 2-3 minutes.
- Stir in parmesan cheese and nutmeg (if using) until the cheese is melted and the sauce is smooth. Adjust seasoning with salt and pepper as needed.
- Combine Everything:
- Add the cooked pasta and chicken to the sauce. Toss gently to coat, adding reserved pasta water a little at a time if the sauce is too thick.
- Serve:
- Divide the pasta among plates or bowls. Garnish with fresh parsley and extra parmesan cheese, if desired. Serve immediately.
