- 4–5 large Russet potatoes
- 1 cup sharp cheddar cheese (shredded)
- ½ cup milk
- ¼ cup unsalted butter
- 2 large eggs
- 1 teaspoon baking powder
- Salt and pepper to taste

Instructions
- Peel and chop the potatoes. Boil in water until fork-tender, then drain and mash until smooth.
- Mix in butter, milk, salt, pepper, and half of the cheddar cheese until creamy.
- Stir in eggs and baking powder until well combined.
- Fold in the remaining cheese and optional green onions or chives.
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- Fill each muffin cup about three-quarters full with the potato mixture.
- Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
