Description

Ingredients

  • 45 large Russet potatoes
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup milk
  • ¼ cup unsalted butter
  • 2 large eggs
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Optional: Green onions or chives

Instructions

  1. Peel and chop the potatoes. Boil in water until fork-tender, then drain and mash until smooth.
  2. Mix in butter, milk, salt, pepper, and half of the cheddar cheese until creamy.
  3. Stir in eggs and baking powder until well combined.
  4. Fold in the remaining cheese and optional green onions or chives.
  5. Preheat oven to 375°F (190°C) and grease a muffin tin.
  6. Fill each muffin cup about three-quarters full with the potato mixture.
  7. Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
