Ingredients
- 1 head cauliflower (about 600g), chopped
- 2 heads garlic, roasted
- 1 cup sharp cheddar cheese, grated
- 4 cups low-sodium vegetable broth
- 1 medium onion, diced
- 1 cup heavy cream
Instructions
- Preheat oven to 400°F (200°C). Wrap garlic heads in foil and roast for 30-35 minutes until soft.
- In a large pot, sauté onions in olive oil until translucent. Add chopped cauliflower and cook for another 5 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until cauliflower is tender.
- Squeeze roasted garlic out of its skins into the pot. Use an immersion blender to puree until smooth.
- Stir in grated cheddar cheese and heavy cream until fully combined. Season with salt and pepper to taste before serving.
