  • 1 tsp baking powder
  • 1 tsp ground cinnamon

  • 1/2 cup shredded carrots (freshly grated)
  • 1/2 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/4 cup vegetable oil
  • 1/4 cup whole milk (or almond/oat milk)
  • 1 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1 cup powdered sugar
  • Milk as needed for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, mix sugar, eggs, vegetable oil, milk, and vanilla extract until smooth.
  4. Fold in shredded carrots into the wet mixture.
  5. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  6. Fill each donut cavity about two-thirds full with batter.
  7. Bake for 10-12 minutes or until donuts spring back when pressed.
  8. Cool for 5 minutes in the pan before transferring to a wire rack.
  9. For the glaze, mix softened cream cheese and powdered sugar until smooth; add milk gradually for desired consistency.
  10. Dip cooled donuts in glaze or drizzle it over them before serving.
