Ingredients

  • Large Russet Potatoes
  • Fresh Broccoli
  • Cheddar Cheese
  • Sour Cream
  • Garlic Powder
  • Salt and Pepper
  • Butter

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub and dry the russet potatoes.
  2. Prick each potato several times with a fork, then bake directly on the oven rack for 45-60 minutes until tender.
  3. Steam fresh broccoli florets for 5-7 minutes, then finely chop.
  4. In a bowl, mix steamed broccoli, grated cheddar cheese, sour cream, garlic powder, salt, pepper, and butter until well combined.
  5. Allow baked potatoes to cool slightly, slice open lengthwise, and scoop out some insides to create space for filling.
  6. Generously stuff each potato half with the cheesy broccoli mixture.
  7. Return to the oven at 375°F (190°C) for an additional 15-20 minutes until golden and bubbling.
