Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
- In another bowl, combine flour and baking powder, then gradually add to wet ingredients until just mixed.
- Scoop rounded tablespoons of dough onto baking sheets, spacing them apart. Bake for 10-12 minutes until edges are golden and centers remain soft.
- While cookies cool, whisk instant pudding mix with milk until thickened; refrigerate.
- Melt chocolate chips in microwave intervals until smooth.
- Once cookies are cooled, spread or pipe chilled custard filling onto half of them, top with another cookie half, and drizzle melted chocolate.
