Instructions
- Prepare the Beef Filling:
- Heat olive oil in a skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned.
- Add the onion and garlic, cooking for 2-3 minutes until softened.
- Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Add water and let the mixture simmer for 5 minutes, stirring occasionally.
- Make the Salsa:
- In a bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and let sit for 5-10 minutes to allow the flavors to meld.
- Warm the Tortillas:
- Heat the tortillas in a dry skillet over medium heat for 20-30 seconds per side or microwave for 15 seconds.
- Assemble the Tacos:
- Fill each tortilla with a scoop of the beef mixture. Top with fresh salsa, shredded lettuce, cheese, sour cream, and avocado slices.
