  • 8 ounces cremini or white mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 12 ounces egg noodles, cooked according to package instructions
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Beef:
    • Season the beef slices with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
    • Sear the beef slices in batches until browned on both sides (about 2-3 minutes per side). Remove and set aside.
  • Cook the Vegetables:
    • In the same skillet, melt butter. Add onions and garlic, sautéing until softened and fragrant (about 2 minutes).
    • Add mushrooms and cook until they release their juices and become golden brown (about 5-7 minutes).
  • Make the Sauce:
    • Stir in the flour and cook for 1 minute to remove the raw flavor.
    • Gradually add the beef broth, whisking to combine. Add Dijon mustard and Worcestershire sauce. Simmer for 3-4 minutes until slightly thickened.
  • Finish the Dish:
    • Lower the heat and stir in the sour cream. Add the seared beef back to the skillet and cook for another 2-3 minutes until the beef is heated through.
    • Adjust seasoning with salt and pepper, if needed.
  • Serve:
    • Serve the beef stroganoff over cooked egg noodles or rice. Garnish with chopped parsley.
