Ingredients

Scale
  • For the Marinade:
    • 1/4 cup olive oil
    • 3 tablespoons soy sauce
    • 2 tablespoons lemon juice
    • 2 garlic cloves, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon black pepper
    • 1 teaspoon dried oregano
  • For the Kebabs:
    • 1 1/2 pounds beef sirloin or tenderloin, cut into 1-inch cubes
    • 1 red bell pepper, cut into 1-inch pieces
    • 1 green bell pepper, cut into 1-inch pieces
    • 1 red onion, cut into wedges
    • 1 zucchini, sliced into thick rounds
    • Wooden or metal skewers

Instructions

  1. Prepare the Marinade:
    • Combine olive oil, soy sauce, lemon juice, garlic, cumin, smoked paprika, black pepper, and oregano in a bowl. Whisk well to combine.
  2. Marinate the Beef:
    • Place the beef cubes in a resealable bag or large bowl. Pour the marinade over the beef, ensuring it’s evenly coated. Refrigerate for at least 1 hour or up to 8 hours for best flavor.
  3. Prepare the Skewers:
    • If using wooden skewers, soak them in water for 30 minutes. Thread marinated beef onto skewers, alternating with pieces of bell peppers, onion, and zucchini.
  4. Grill the Kebabs:
    • Preheat your grill to medium-high heat. Oil the grill grates lightly to prevent sticking.
    • Place the kebabs on the grill and cook for 8-10 minutes, turning occasionally, until the beef reaches desired doneness (medium-rare: 135°F, medium: 145°F).
  5. Serve:
    • Remove kebabs from the grill and let rest for 5 minutes. Serve hot with rice, flatbread, or a side salad.
