Description

This hearty Beef and Sweet Potato Stew combines tender chunks of beef, naturally sweet and creamy sweet potatoes, and a rich, flavorful broth. Ingredients

  • 1.5 lbs beef chuck or stew meat, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cups sweet potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup water
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the Beef:
    • Heat olive oil in a large pot or Dutch oven over medium-high heat.
    • Season the beef with salt and pepper, then add to the pot. Sear on all sides until browned. Remove the beef and set aside.
  2. Sauté Vegetables:
    • In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes until softened. Add garlic and cook for another minute.
  3. Build the Broth:
    • Stir in the tomato paste, thyme, smoked paprika, and bay leaf. Cook for 1 minute to release flavors.
    • Pour in the beef broth, water, and Worcestershire sauce. Bring to a simmer.
  4. Simmer the Stew:
    • Return the beef to the pot and cover with a lid. Reduce heat to low and simmer for 45 minutes to 1 hour, or until the beef is tender.
  5. Add Sweet Potatoes:
    • Add the sweet potato cubes to the pot. Continue simmering for 20-25 minutes, or until the sweet potatoes are tender but not mushy.
  6. Finish and Serve:
    • Remove the bay leaf. Taste and adjust seasonings if necessary.
    • Ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

 

  • For added depth of flavor, deglaze the pot with a splash of red wine after browning the beef.
  • To make this in a slow cooker, transfer the browned beef and sautéed vegetables to the slow cooker, add the broth, and cook on low for 6-8 hours.
