- 1.5 lbs beef chuck or stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cups sweet potatoes, peeled and cubed
- 4 cups beef broth
- 1 cup water
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 bay leaf
- 1 tablespoon Worcestershire sauce
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the Beef:
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season the beef with salt and pepper, then add to the pot. Sear on all sides until browned. Remove the beef and set aside.
- Sauté Vegetables:
- In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes until softened. Add garlic and cook for another minute.
- Build the Broth:
- Stir in the tomato paste, thyme, smoked paprika, and bay leaf. Cook for 1 minute to release flavors.
- Pour in the beef broth, water, and Worcestershire sauce. Bring to a simmer.
- Simmer the Stew:
- Return the beef to the pot and cover with a lid. Reduce heat to low and simmer for 45 minutes to 1 hour, or until the beef is tender.
- Add Sweet Potatoes:
- Add the sweet potato cubes to the pot. Continue simmering for 20-25 minutes, or until the sweet potatoes are tender but not mushy.
- Finish and Serve:
- Remove the bay leaf. Taste and adjust seasonings if necessary.
- Ladle into bowls, garnish with fresh parsley, and serve hot.

- For added depth of flavor, deglaze the pot with a splash of red wine after browning the beef.
- To make this in a slow cooker, transfer the browned beef and sautéed vegetables to the slow cooker, add the broth, and cook on low for 6-8 hours.
