Ingredients
- Lentils (green or brown)
- Canned chickpeas
- Ground meat (lamb, beef, or turkey)
- Fresh or canned tomatoes
- Yellow onion
- Cilantro and parsley
- Spices (cumin, paprika, cinnamon, turmeric)
- Stock or water
- Lemon juice
- Olive oil
Instructions
- Rinse lentils until clear. Chop onions, tomatoes, cilantro, and parsley; drain chickpeas.
- In a large pot over medium heat, warm olive oil. Sauté onions until golden brown (about 5 minutes).
- Add ground meat to the pot; cook until browned while breaking it into small pieces.
- Stir in spices (cumin, paprika, cinnamon, turmeric) along with salt and pepper; cook for 1 minute to release aromas.
- Pour in chopped tomatoes and stock/water; bring to a gentle boil.
- Add lentils and chickpeas; reduce heat to low and simmer for 30-40 minutes until lentils are tender.
- Serve hot, garnished with chopped cilantro and parsley plus a squeeze of lemon juice.
