Description

Ingredients

  • Lentils (green or brown)
  • Canned chickpeas
  • Ground meat (lamb, beef, or turkey)
  • Fresh or canned tomatoes
  • Yellow onion
  • Cilantro and parsley
  • Spices (cumin, paprika, cinnamon, turmeric)
  • Stock or water
  • Lemon juice
  • Olive oil

Instructions

  1. Rinse lentils until clear. Chop onions, tomatoes, cilantro, and parsley; drain chickpeas.
  2. In a large pot over medium heat, warm olive oil. Sauté onions until golden brown (about 5 minutes).
  3. Add ground meat to the pot; cook until browned while breaking it into small pieces.
  4. Stir in spices (cumin, paprika, cinnamon, turmeric) along with salt and pepper; cook for 1 minute to release aromas.
  5. Pour in chopped tomatoes and stock/water; bring to a gentle boil.
  6. Add lentils and chickpeas; reduce heat to low and simmer for 30-40 minutes until lentils are tender.
  7. Serve hot, garnished with chopped cilantro and parsley plus a squeeze of lemon juice.
