- 1 cup apricots, dried and chopped
- 1/2 cup almonds, slivered
- 2 cups beef broth
- 1 tbsp honey
- 1 tbsp olive oil
Lamb Shank with Red Wine Sauce:
- 2 lamb shanks
- 2 tbsp olive oil
- 2 carrots, chopped
- 2 onions, chopped
- 3 cloves garlic, minced
- 1 cup red wine
- 2 cups beef broth
- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
Instructions
Herb-Crusted Lamb Rack:
- Preheat oven to 400°F (200°C).
- Season lamb rack with salt, pepper, rosemary, and thyme.
- In a small bowl, combine olive oil, garlic, and Dijon mustard. Brush the mixture over the lamb.
- Roast in the oven for 25-30 minutes for medium-rare. Let it rest for 5 minutes before slicing.
Lamb Tagine with Apricots and Almonds:
- Heat olive oil in a large pot. Brown lamb cubes on all sides, then remove from the pot.
- Sauté onions and garlic in the same pot until softened.
- Add cumin, cinnamon, apricots, and almonds, stirring to combine.
- Return lamb to the pot, add beef broth and honey. Simmer for 1.5-2 hours until the lamb is tender and the sauce thickens.
Lamb Shank with Red Wine Sauce:
