Herb-Crusted Lamb Rack:

  • 1 rack of lamb (8 ribs)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp Dijon mustard

Lamb Tagine with Apricots and Almonds:

  • 1 lb lamb shoulder, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 cup apricots, dried and chopped
  • 1/2 cup almonds, slivered
  • 2 cups beef broth
  • 1 tbsp honey
  • 1 tbsp olive oil

Lamb Shank with Red Wine Sauce:

  • 2 lamb shanks
  • 2 tbsp olive oil
  • 2 carrots, chopped
  • 2 onions, chopped
  • 3 cloves garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tbsp fresh rosemary
  • 1 tbsp fresh thyme

Instructions

Herb-Crusted Lamb Rack:

  1. Preheat oven to 400°F (200°C).
  2. Season lamb rack with salt, pepper, rosemary, and thyme.
  3. In a small bowl, combine olive oil, garlic, and Dijon mustard. Brush the mixture over the lamb.
  4. Roast in the oven for 25-30 minutes for medium-rare. Let it rest for 5 minutes before slicing.

Lamb Tagine with Apricots and Almonds:

  1. Heat olive oil in a large pot. Brown lamb cubes on all sides, then remove from the pot.
  2. Sauté onions and garlic in the same pot until softened.
  3. Add cumin, cinnamon, apricots, and almonds, stirring to combine.
  4. Return lamb to the pot, add beef broth and honey. Simmer for 1.5-2 hours until the lamb is tender and the sauce thickens.

Lamb Shank with Red Wine Sauce:

 

  1. Heat olive oil in a large pot over medium heat. Brown lamb shanks on all sides, then remove.
  2. Add onions, carrots, and garlic, and cook until softened.
  3. Deglaze the pot with red wine, then add beef broth, rosemary, and thyme.
  4. Return lamb to the pot and simmer for 2-3 hours until the meat is tender and the sauce reduces.
